Chocolate Protein Cookies

Ingredients:

1 cup peanut butter or almond butter

1 egg

1/2 cup quick oats

3/4 cup chocolate chips

1/2 cup light brown sugar

1/2 tsp cinnamon

1 scoop of PI’s chocolate protein powder

1/8 cup coconut (optional)

Preheat oven to 350. Line a baking sheet with parchment paper.

Combine all ingredients in a large mixing bowl. Stir until well combined and dough is not too sticky. If it’s sticky, add a few more oats.

Form dough into balls and add to cookie sheet. Flatten slightly.

Bake for 8-10 minutes. Let cool on the cookie sheet for a few minutes before serving; cookies will firm up.

Enjoy!

Store in an airtight container. Cookies will keep for several days, but you won’t let them last that long!
