With the holidays approaching, you will most likely be asked to bring something to an event. These healthy PI protein cupcakes will be a big hit!
Prep Time – 10 minutes
Cook Time – 15 minutes
Total Time – 25 minutes
Serving – 12 cupcakes
Calories – Depend on the protein and cake mix you pick.
Step 1 – Gather all ingredients. You will need the following:
- 1 cup sugar-free yellow cake mix
- 2 scoops PI Vanilla Protein Powder; you can choose from our Vanilla Isolate Whey, Performance Whey, or Plant-Based Protein
- ¼ cup unsweetened almond milk
- 3 eggs
- Sugar-free frosting (whatever flavor you wish)
- Cupcake liners (unless you are using a silicone baking pan).
Step 2 – Preheat your oven to 325 degrees Fahrenheit. While your oven is heating up, get your pan(s) ready. This recipe makes 12 cupcakes. If you are using a silicone baking pan, spray it with nonstick cooking spray. If you are using a regular tin pan, put your cupcake liners in.
Step 3 – Put all dry ingredients (cake mix and protein powder) into a large bowl.
Step 4 – Mix in the 3 eggs and ¼ cup unsweetened almond milk.
Step 5 – Once your ingredients are mixed well, use a spoon to transfer the cupcake batter into the pan. Make sure to only fill about half way. Start on the lighter side and fill in at the end as needed, so you don’t run out of batter before you fill all 12.
Step 6 – Bake for 12-14 minutes or until an inserted toothpick comes out clean.
Step 7 – Once your cupcake has cooled off, you can go ahead and add the icing of your choice and then enjoy.
