What do you think of when you hear the word vegan? For far too many, the connotation includes tasteless or “weird” foods that you may not want to eat. But this is far from the reality.
Maybe you choose to eat vegan because you do not want to eat animal products or have an allergy to some animal products, or maybe you are simply limiting the amount you eat because of certain health restrictions or because you are hoping to lower your risk for type 2 diabetes. Regardless of the reason, we bet you will be surprised at some of the amazing foods you can eat if you’re vegan or if you just want to eat healthier foods.
We want to explore seven delicious vegan foods that you can incorporate into your diet that are not only packed with nutrients and protein but that also taste good. Even if you do not fall into one of the categories above, you could add some of these to your daily diet as alternatives to some of your regular meals or snacks to add variety and to reap the health benefits.

5. Fruits and vegetables
Did you know that we should eat five servings (four to six ounces at each serving) of fruits and vegetables each day? Fruits and vegetables contain the antioxidants, vitamins, and minerals that fuel our bodies and keep them healthy. But eating five servings is often difficult for many, especially if you eat out frequently or tend to grab something simple on-the-go. The Mayo Clinic encourages people to take a 1,2,3 approach with these foods: one serving with breakfast, two with lunch, and three with dinner or as a snack in between meals. Eating this much may seem difficult at first, but with a conscious effort to add more into your diet, you will soon find that it’s much easier and that you want to eat these foods. So start the day with a smoothie, eat steamed vegetables as a side dish at lunch and dinner, snack on some grapes or an avocado, or add some nut butter to carrots and celery. Once you realize how many options you have, you will find that you truly enjoy these foods.
6. Whole grains
Whole grains contain fiber, B vitamins, protein, antioxidants, and other nutrients that not only reduce your risk for certain diseases such as type 2 diabetes but help reduce the risk of stroke, obesity, and heart disease. Eliminate white breads and pastas from your diet, and eat whole grains instead. Additionally, foods like quinoa and brown rice are great additions to meals. And you haven’t tasted a really good pancake until you have eaten one made with buckwheat flour!
7. Beans
Beans, including black, pinto, garbanzo, and kidney, contain high amounts of fiber, protein, and other vitamins and minerals. They are a versatile food that you can eat as a side dish or by themselves as a snack, mash up to add into a burrito, eat on top of a salad, and more!
We only get one body, and we must learn to treat it well. We don’t have to radically change our diets or eat vegan foods all the time, but making small changes by eating more fruits, vegetables, beans, and whole-grain foods will keep our bodies running smoother and may help stave off some of the diseases that have become so prominent today.
